Some days you just want to tuck into a homey, warm meal that reminds you of your childhood. It doesn’t matter if you don’t eat meat or dairy; a bowl of vegan comfort food is equally indulgent and satisfying. Here are 5 quick and easy vegan comfort food recipes that are favorites, and you will definitely love them!

 

  1. Vegan French Toast (Serves 2)

Ingredients:

  • 1 tbsp ground chia seeds
  • ½ tbsp maple syrup or agave nectar
  • 1 cup almond milk
  • ½ tsp vanilla extract
  • ½ tsp ground cinnamon
  • 4-5 slices of vegan bread

Toppings:

  • Blueberries
  • Strawberries
  • Maple Syrup

Directions:

  1. Mix chia seeds, maple syrup (or agave nectar), almond milk, vanilla extract, and cinnamon in a big shallow bowl and refrigerate the mixture for 10-15 minutes.
  2. Put a pan on medium heat and grease with a little bit of vegan butter or oil.
  3. Dip sliced bread in the batter, ensuring each side is coated properly.
  4. Place it on the pan and cook each side until golden brown.
  5. Plate it out and serve with strawberries, blueberries, and maple syrup.

 

  1. Vegan Mac n Cheese (Serves 4)

Ingredients:

  • 2 cups macaroni
  • 1 cup diced potatoes
  • ¼ cup diced carrots
  • 1/3 cup chopped onion
  • ½ cup raw cashews
  • ½ cup coconut milk
  • 1 tbsp lemon juice
  • 1 ½ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp garlic powder
  • ¼ tsp paprika

Directions:

  1. Boil the macaroni in salted water for 6-8 minutes, drain, and set aside.
  2. Boil several cups of water in a pot, add all the vegetables to the boiling water, and cook for 10-12 minutes.
  3. Blend the boiled vegetables along with the rest of the ingredients and spices in your blender until smooth.
  4. Pour the pureed mixture over cooked macaroni in a dish, combine well and serve.

 

  1. Vegan Chickpea Nuggets (Serves 3)

Ingredients

  • ½ cup vegan breadcrumbs
  • ½ cup rolled oats
  • 1 can chickpeas (with the liquid)
  • 1 tsp kosher salt
  • ½ tsp garlic powder
  • ½ tsp onion powder

Directions

  1. Preheat the oven to 375F.
  2. Place the breadcrumbs on a sheet pan and bake till toasted, about 5-7 minutes. Transfer to a bowl and set aside.
  3. Put the oats in a food processor and process them into fine flour. Transfer to a larger bowl and set aside.
  4. Place the chickpeas, salt, garlic powder, and onion powder and process till crumbly.Pour ¼ chickpea liquid into a small bowl and whisk till foamy.
  5. Add the foamy liquid and the oat flour to the food processor. The mixture should be firm and thick enough.
  6. Divide the mixture into 12 small portions and shape each portion into a nugget (or whatever shape you like).
  7. Coat each nugget in toasted breadcrumbs and place it onto a parchment-lined baking sheet.
  8. Bake for 15-20 minutes until golden brown and crispy.

 

  1. Vegan Grilled Cheese (Serves 2)

Ingredients

  • ½ cup full-fat coconut milk
  • ½ tsp coconut vinegar
  • 1 tsp agar powder
  • ½ tsp salt
  • ½ tbsp tapioca floor
  • 1 tbsp nutritional yeast
  • 4 pieces of vegan sandwich bread
  • ½ tbsp softened vegan butter

Directions

  1. Combine coconut milk, coconut vinegar, agar, salt, and tapioca flour in a saucepan.
  2. Whisk the mixture on low-medium heat till it comes to a boil.
  3. Remove the pan from the heat, stir in the nutritional yeast, and transfer the cheese mixture to a bowl.
  4. Place vegan butter in a skillet on medium heat. Put a bread slice and spread a layer of cheese mixture and another bread splice on top. Grill the sandwich on both sides till it becomes golden brown.
  5. Plate it out and enjoy!

Ingredients:

  • 1 ½ cup cooked chickpeas
  • 3 tbsp nut butter of your choice
  • 1 tbsp applesauce
  • ¾ cup sugar
  • ¼ cup quick oats
  • 2 ½ tsp vanilla extract
  • A pinch of baking soda
  • A pinch of salt
  • ½ cup vegan chocolate chips

Directions:

  1. Put all the ingredients in a food processor and blend until smooth.
